I'm surprised no one's mentioned Chrono Cross; I thought it was famous for an incredible score, and certainly I feel that way.

The soundtrack to Final Fantasy: Crystal Chronicles was also wonderful.  Both these games are things that I would (and have!) start up simply to hear the music.

Chrono Cross is excellent, yes. Didn't have room for it in my list (and Mitsuda was already represented anyway).

While I am posting, I will also pimp out Star Control 2's music. Especially the Yehat theme. Most of the remixes made for the free version are quite excellent, so I wish they'd remake that one already.
