Before I do these rolls, I want to verify how Thousand Cuts works - Do I basically make 2 attacks for each swing? I.e. I'm not making "eight" attacks, so the rolls wouldn't be (as an example) +75/70/65/60/55/50/45/40, but instead be 75/75/70/70 (etc)?

Right, that part I get - I am trying to understand if I roll it as if I'm making 8 attacks (so a descending of 5 over 8 rolls) like so:
