It occurs to me there might be miscommunication here. What do my knowledges tell me are the ways to sunder such contracts are, and is there one I can use in the present situation?

Oh, right. Okay.

1. Kill the contractor. This may work depending on the contract and the terms. Not likely in this case since it's probably a longer term contract.
2. Make the summoner break the terms of the contract. Requires having your hands on the summoner. Probably not useful when you have a primal elemental right next to you.
3. A sufficiently powerful dispel might work, depending on the spell and method used, as well as the power of the contractor.
4. If all else fails, a miracle might, though that's asking for the Triune to directly intervene.

What do my knowledges tell me about forming a contract here? Procedure, limits, etc? Is this more of a negotiation, or he would refuse to burn devils or efreet, and only show up when I'm fighting someone from Water?

Fairly simple. Normally you'd use bindings and magic to do this, but an entity of this power offering a contract is sufficient to cover it. You have to make a proposal and it has to accept it. Negotiation is the norm.

"The goal of achieving great things in Fire's name is acceptable," Jaela responds, matching the elemental's way of talking so they better understand each other. "I intend to do this by using Goldenfire, catching Kossuth's eye and swinging the balance of power on Fire from Evil to Good. Fire will stand above Water. While Water is forgotten, Fire will become the focus of the elemental planes. Aid me in this by destroying efreet slavers, devils and their allies. Support me against my enemies.

Fire spread from horizon to horizon, the ground below you melting into lava. "AGREED." Mountainous Fire confirms.

Jaela can feel magic washing over her.

You'd know it's the contract. You can make a Will save to resist if you want, but you'd also know making it would ruin the contract.

"DONE," Mountainous Fire declares, bringing his hand up to the ship. "I WILL TAKE YOU TO FOURFIRES."

Jaela gains the following special attack and special quality:

Summon (Sp)

Once per day as a standard action, Jaela can summon Mountainous Fire to aid her. The summons will only be answered if they pertain to aiding Jaela destroying efreet slavers, devils and related allies and supporting her against her enemies. Mountainous Fire remains until the task at hand is completed or one hour passes, whichever comes first. This is equivalent to a 15th level spell.

Contracted (Ex)

You have accepted a contract to challenge and defeat Cryonax, Elemental Prince of Evil for Ice. Should you encounter Cryonax, you must attack him and attempt to destroy him with all the resources you have available. Jaela will periodically feel the need to advance her contract and work to weaken and ultimately destroy Cryonax. Failing to uphold this can result in the contract being sundered, as well treating with Cryonax or offering him any sort of aid.
